3 cups fresh spinach

½ cup Parmesan cheese

4 eggs

1 tablespoon za'atar
-
2 shallots
-
2 garlic cloves
-
1 ¾ cups heavy cream

1 loaf of bread
Directions
Prep the Vegetables: Peel and finely chop the shallots and garlic.
Sauté the Aromatics: In your Mineral B Carbon Steel Fry Pan, melt a pat of butter over medium heat. Add the chopped shallots and garlic, and sauté until softened.
Cook the Spinach: Wash, stem, and dry the spinach. Add it to the fry pan and cook over medium heat until wilted.
Add the Cream: Pour in the heavy cream, then season with salt and pepper to taste.
Separate the Eggs: Crack the eggs, separating the yolks from the whites. Add the egg whites to the fry pan and stir for 5-6 minutes until incorporated.
Toast the Bread: Toast slices of bread until golden.
Finish the Dish: Gently add the egg yolks and sprinkle Parmesan cheese into the skillet.
Serve: Enjoy with the toasted bread slices on the side.
