Our 12.5" Blue Carbon Steel Wok is a culinary powerhouse, designed for those who love to create authentic Asian cuisine or enjoy versatile high-heat cooking. This expertly crafted wok features a unique blue carbon steel construction, offering superior heat distribution and natural non-stick properties when properly seasoned.

Ideal for 4-6 people or more, this substantial wok excels at:

• Stir-frying large portions of vegetables and meats
• Deep-frying crispy tempura or spring rolls
• Steaming dumplings or fish
• Preparing generous servings of fried rice or noodles

The impressive 12.5-inch diameter provides an expansive cooking surface with high, sloping sides perfect for tossing ingredients with ease. Its blue carbon steel composition ensures rapid heating and excellent temperature control, compatible with all cooktops including high-powered wok burners.

A key feature of this wok is its hefty size, which allows for cooking larger portions and retains heat exceptionally well. The main ergonomic handle offers a comfortable grip, while the additional helper handle provides extra support and control when lifting or maneuvering this substantial piece of cookware.

With proper seasoning, this wok develops a natural non-stick surface without the need for synthetic coatings. It's durable, versatile, and improves with use over time, developing a unique patina that enhances its non-stick properties. Hand washing is recommended for best results and longevity.

  • Use & Care

    • Before first use, wash the pan thoroughly with hot water and a scrub brush or sponge —no soap needed. Once clean and dry, season your pan by heating it and applying a thin layer of high-smoke point oil (like grapeseed or avocado). Heat until the oil begins to smoke lightly, then let it cool. This begins building the natural nonstick patina. After cooking, rinse with hot water, wipe clean, and dry completely. Avoid soap and never put it in the dishwasher. Rub with a light coat of oil before storing. Your pan will darken and perform better with every use.

Frequently Asked Questions

What is blue carbon steel cookware, and how does it differ from regular carbon steel?

Blue carbon steel cookware is carbon steel that has undergone a heat treatment process called 'annealing' or 'blueing.' This process involves heating the cookware to high temperatures, which causes a chemical reaction on the surface, forming a thin layer of iron oxide. This layer gives the cookware a bluish tint, hence the name 'blue carbon steel.' The main difference between blue carbon steel and regular carbon steel is this additional heat treatment. Blue carbon steel has increased corrosion and rust resistance compared to untreated carbon steel. However, both types still require seasoning for optimal performance and longevity. The blue color is temporary and will fade with use and seasoning. Functionally, blue carbon steel performs similarly to regular carbon steel, offering excellent heat conductivity and durability. Both types develop a natural non-stick surface with proper seasoning and use. While the blue treatment provides some initial protection, it doesn't eliminate the need for proper care and seasoning. Both blue and regular carbon steel cookware require similar maintenance to prevent rust and maintain their cooking performance.
