How to Season a Blue Carbon Steel Pan
Seasoning your de Buyer Blue Carbon Steel pan is the key to unlocking its natural, long-lasting nonstick performance and protecting the carbon steel from rust.
Our Blue Carbon Steel pans can be seasoned in the oven and also on the stove top. Except for our crepe and tortilla pan, which should only be seasoned on the stove.

Seasoning your Blue Carbon Steel Pan on the Stovetop
1. Start with a Clean Pan
Wash your pan with hot, soapy water to remove the bee’s wax, then dry thoroughly. Any remaining wax will burn off during seasoning.
2. Heat the Pan on 3/4 of Power
Heat your pan over medium-high heat (about 75% power). Allow it to warm until the surface is fully heated.
3. Add the Oil
Pour a small amount of high-smoke-point oil (such as grapeseed, avocado, canola, or sunflower) onto the pan.
4. Distribute the Oil
Spread the oil evenly over the entire surface of the pan, including the sides. Make sure the entire surface of the pan is covered in oil.
5. Heat the Pan
Let the pan heat up for about 10 minutes. Please monitor closely while the pan is on the stove and use caution, as it will be extremely hot.

6. Let the Pan cool
After the 10 minutes have passed, turn off the stove and let the pan cool.
7. Drain and Wipe off Oil
Carefully drain the excess oil into a safe container and wipe the pan with a paper towel.
8. Heat up Pan One Last Time
Finish drying your pan by heating it on the stove for about 2 minutes.
9. Your Pan is Seasoned
Congratulations, you’ve just completed your first layer of seasoning. You could stop here and start cooking. Every time you use the pan, the seasoning will continue to build naturally.
